Dietary protein adjustments can reduce environmental impact and economic losses in production systems. However, we lack information regarding nitrogen (N) metabolism and protein requirements for maintenance of crossbred animals such as Red Norte breed, precluding a precise dietary management. The objective was to evaluate the effect of increasing dietary CP levels (9%, 11%, 13%, 15% and 17%) on intake, digestibility and N balance, as well as to estimate the metabolizable protein requirements for maintenance (MPm) of growing Red Norte bulls. Thirty five animals averaging 280 ± 4.0 kg BW were fed during 45 days in a 60 : 40 forage : concentrate ratio diet in which the last 5 days were used for the digestibility trial. Intakes of CP and non-fibrous carbohydrates (NFCs) and feed efficiency linearly increased (P < 0.05) as CP levels increased, while DM, NDF, nitrogen efficiency use and ether extract were not influenced by CP levels (P > 0.05). Digestibilities of DM, organic matter, ether extract, NFC and CP as well as metabolizable energy intake linearly increased (P < 0.05), and true digestibility of CP was not affected (P > 0.05) by treatments. Urinary N and retained N linearly increased (P < 0.05) with the increase in dietary N. The MPm were estimated as 4.46 g/BW0.75 and the efficiency of use of MPm was 0.673. In conclusion, obtained MPm requirements of growing Red Norte bulls are greater than the values reported in literature for Zebu cattle and dietary CP levels of 15% and 17% exhibited great responses for growing Red Norte cattle. However, a cost-benefit evaluation should be done before its use.

The morphology of the ruminal and omasal mucosa and hepatic parenchyma of 44 young bulls submitted to four types of concentrates were evaluated by varying the inclusion level of crude Glycerin - CG (0, 6, 12 and 18%). The variables evaluated were number of ruminal papillae per cm² of wall; area of the papillae and total absorption surface per cm² of wall; Mitotic index - MI, height and area of ruminal and omasal papillae; and hepatic morphology. The samples processed for inclusion in paraffin and stained with Hematoxylin-Eosin. The different levels of inclusion of CG in the diet did not interfere either in the number of papillae per cm2 of rumen wall (P= 0,70) or in the ruminal absorptive surface area (P= 0,89). Animals that received diets with levels 12 and 18% had higher MI of the ruminal epithelium (P< 0.01), but higher cell proliferation wasn't reflected in height gain and papillary area (P= 0,82). The omasal mucosa wasn't influenced by the inclusion of CG (MI e height gain and papillary area, P= 0,43, P= 0,56 e P= 0,9, respectively). The inclusion of GB in up to 18% of diet dry matter didn't alter the morphology of the rumen and omaso mucosa; and the integrity hepatic parenchyma.(AU)

RESUMO

The present review will present the recent published results and discuss the main effects of nutrients, mainly fatty acids, on the expression of genes involved in lipid metabolism. In this sense, the review focuses in two phases: prenatal life and finishing phase, showing how nutrients can modulate gene expression affecting marbling and fatty acid profile in meat from ruminants. Adiposity in ruminants starts to be affected by nutrients during prenatal life when maternal nutrition affects the differentiation and proliferation of adipose cells enhancing the marbling potential. Therefore, several fetal programming studies were carried out in the last two decades in order to better understand how nutrients affect long-term expression of genes involved in adipogenesis and lipogenesis. In addition, during the finishing phase, marbling becomes largely dependent on starch digestion and glucose metabolism, being important to create alternatives to increase these metabolic processes, and modulates gene expression. Different lipid sources and their fatty acids may also influence the expression of genes responsible to encode enzymes involved in fat tissue deposition, influencing meat quality. In conclusion, the knowledge shows that gene expression is a metabolic factor affecting marbling and fatty acid profile in ruminant meat and diets and their nutrients have direct effect on how these genes are expressed.

The objectives of this study were to test the interaction of breed (Nellore or Angus) and diet (whole shelled corn [WSC] or ground corn [GC] with silage) on growth performance, carcass characteristics, and ruminal pH of young bulls. Thirty-six bulls (18 Nellore and 18 Angus) with the range in age of 18 to 22 mo and BW of 381 ± 12 kg were used in a completely randomized design experiment with a 2 × 2 factorial arrangement of treatments (2 breeds and 2 diets). Experimental diets (DM basis) included 1) a GC diet containing 30% corn silage and 70% GC- and soybean meal-based concentrate and 2) a WSC diet containing 85% WSC and 15% of a soybean meal- and mineral-based pelleted supplement. An additional 8 bulls were slaughtered at the beginning of the experimental period for determination of initial carcass weight. The treatments were Nellore fed the GC diet, Nellore fed the WSC diet, Angus fed the GC diet, and Angus fed the WSC diet. Greater DMI ( < 0.01), ADG ( < 0.01), and G:F ( < 0.01) were observed in Angus bulls compared with Nellore bulls, regardless of diet. Lower average ruminal pH ( = 0.04), maximum ruminal pH (P = 0.02), and DMI ( < 0.01) were observed in bulls fed the WSC diet than in those fed the GC diet. In addition, bulls fed the WSC diet had greater G:F ( < 0.01). The WSC diet led to greater variation in DMI compared with the GC diet ( < 0.01). Omasum and large intestine percentage was affected by diets only in the Angus breed ( < 0.02) and were greater when bulls were fed the GC diet. The WSC diet without forage may be useful for feedlots because this diet promoted greater G:F than the GC diet, regardless of breed. However, special care must be exercised in feed management during adaptation and throughout the feeding of Nellore animals to avoid digestive disorders and fluctuations in DMI.

We aimed to evaluate the expression of genes related to the regulation of muscle protein turnover in the longissimus dorsi (LD) muscle of Angus and Nellore bulls and to estimate the within-breed correlations of gene expression and performance traits. Thirteen genes related to the IGF-1 and myostatin pathways were studied. Thirteen animals, with an initial average BW of 381.2 ± 11.8 kg, from each breed were used in a completely randomized 2 × 2 factorial design (2 breeds and 2 feeding levels). The diet consisted of corn silage and a corn-soybean meal concentrate in a roughage-to-concentrate ratio of 30:70. Cattle were fed ad libitum (with 9 animals from each breed) or feed restricted (a 55% restriction of total DMI of ad libitum-fed animals, calculated as percentage of metabolic BW, with 4 animals of each breed). The experimental period lasted for 82 d and it was preceded by a 28-d adaptation period. The performance traits evaluated were slaughter body weight, total ADG (from d 1 to 82 of the trial), initial ADG (from d 1 to 41 of the trial), final ADG (from d 42 to 82 of the trial), total DMI (from d 1 to 82 of the trial), initial DMI (from d 1 to 41 of the trial), final DMI (from d 42 to 82 of the trial), HCW, LD weight (LDW), and rib eye area (REA). After slaughter, samples were taken from the LD muscle between the 12th and 13th ribs for gene expression analysis by quantitative reverse transcription PCR. There was no difference ( > 0.05) in the expression of any of the genes studied between ad libitum-fed Angus and ad libitum-fed Nellore, whereas feed restriction increased the expression of (; < 0.001), (; = 0.05), and (; = 0.04) and decreased the expression of ( < 0.01). The REA was negatively correlated to (; = 0.01), (; = 0.02), and ( = 0.05). The HCW was negatively correlated to ( = 0.01) and ( = 0.01) and tended to be negatively correlated to ( = 0.07), whereas the LDW tended to be negatively correlated to ( = 0.08). The genes , , and seem to be important for muscle growth and may be worthy of further investigation as future strategies for increasing muscle in livestock.

The traditional techniques to measure heat production (HP) are calorimetry (direct and indirect) and comparative slaughter. Both methods are expensive and require extensive amounts of time and infrastructure. Infrared thermography (IRT) could be a faster and less expensive alternative to estimate cattle HP. The objective of this project was to evaluate the use of the IRT technique as an indicator of HP in cattle. A total of 24 bulls (12 Nellore and 12 Black Angus) with initial BW of 380 ± 7 kg were used. Initially, 4 animals of each breed were harvested (baseline animals) and simple regressions were developed for each breed from these baseline animals to estimate the initial chemical composition of the remaining bulls. Eight animals of each breed were fed a silage/concentrate diet for ad libitum intake in individual stalls. On the 25th, 50th, and 75th experimental day, infrared thermal images (Fluke Ti 55ft; Fluke Corporation) were taken of each animal's face to access skin and ocular surface temperatures. A metabolism trial was conducted to estimate the ME intake (MEI). After 84 experimental days, the cattle were harvested and retained energy (RE) and HP were calculated. The data were analyzed using the MIXED and REG procedures of SAS adopting a significance level of 0.05. Angus cattle had a greater daily MEI, HP, and skin and eye temperatures than Nellore. We found significant correlations ( ≤ 0.005) between daily HP and maximum ( = 0.65) and average skin temperatures ( = 0.65) and maximum ( = 0.65) and average ocular surface ( = 0.69) temperatures recorded on d 50. Infrared thermography has potential to be used to evaluate HP in cattle.

The use of digital images could be a faster and cheaper alternative technique to assess BW, HCW, and body composition of beef cattle. The objective of this study was to develop equations to predict body and carcass weight and body fat content of young bulls using digital images obtained through a Microsoft Kinect device. Thirty-five bulls with an initial BW of 383 (±5.38) kg (20 Black Angus, 390 [±7.48] kg initial BW, and 15 Nellore, 377 [±8.66] kg initial BW) were used. The Kinect sensor, installed on the top of a cattle chute, was used to take infrared light-based depth videos, recorded before the slaughter. For each animal, a quality control was made, running and pausing the video at the moment that the animal was standing with its body and head in line. One frame from recorded videos was selected and used to analyze the following body measurements: chest width, thorax width, abdomen width, body length, dorsal height, and dorsal area. From these body measurements, 23 indexes were generated and tested as potential predictors. The BW and HCW were assessed with a digital scale, whereas empty body fat (EBF) was estimated through ground samples of all tissues. To better understand the relationship among the measurements, the correlations between final BW (488 [±10.4] kg), HCW (287 [±12.5] kg), EBF (14 [±0.610] % empty BW) content, body measurements (taken through digital images), and developed indexes were evaluated. The REG procedure was used to develop the regressions, and the important independent variables were identified using the options STEPWISE and Mallow's Cp in the SELECTION statement. Chest width was the trait most related to weights and the correlations between this measurement and BW and HCW were above 0.85. The analysis of linear regressions between observed and predicted values showed that all models pass through the origin and have a slope of unity (null hypothesis [H]: = 0 and = 1; ≥ 0.993). The models to estimate BW and HCW of Angus and Nellore presented between 0.69 and 0.84 ( < 0.001), whereas from equations to estimate the EBF were lower ( = 0.43-0.45; ≤ 0.006). Index I5 [(chest width) × body length], related to the animal volume, was significant in all models created to estimate BW and HCW, and it explained more than 70% of the variation. This study indicates that digital images taken through a Microsoft Kinect system have the potential to be used as a tool to estimate body and carcass weight of beef cattle.

The objective of this study was to evaluate the fatty acid profile and qualitative characteristics of meat from feedlot young bulls fed ground soybean or ground cottonseed, with or without supplementation of vitamin E. A total of 40 Red Norte young bulls, with an initial average age of 20 months, and an initial average BW of 339±15 kg, were allotted in a completely randomized design using a 2×2 factorial arrangement, with two oilseeds, and daily supplementation or not of 2500 IU of vitamin E. The experimental period was for 84 days, which was preceded by an adaptation period of 28 days. The treatments were ground soybean (SB), ground soybean plus vitamin E (SBE), ground cottonseed (CS) and ground cottonseed plus vitamin E (CSE). The percentage of cottonseed and soybean in the diets (dry matter basis) was 24% and 20%, respectively. Diets were isonitrogenous (13% CP) and presented similar amount of ether extract (6.5%). The animals were slaughtered at average live weight of 464±15 kg, and samples were taken from the longissimus dorsi muscle for the measurement of fatty acid concentration and the evaluation of lipid oxidation and color of the beef. Before fatty acid extraction, muscle tissue and subcutaneous fat of the longissimus dorsi were separated to analyze fatty acid profile in both tissues. Supplementation of vitamin E did not affect fatty acid concentration, lipid oxidation and color (P>0.05). Subcutaneous fat from animals fed CS diet had greater C12:0, C16:0 and C18:0 contents (P<0.03). In addition, CS diets reduced the C18:1 and C18:2 cis-9, trans-11 contents in subcutaneous fat (P<0.05). The muscle from animals fed CS tended to higher C16:0 and C18:0 contents (P<0.11), and decreased C18:1, C18:2 cis-9, trans-11 and C18:3 contents (P<0.05) compared with SB. The Δ9-desaturase index was greater in muscle from animals fed SB (P<0.01). At 42 days of age, meat from cattle fed SB had a greater lipid oxidation rate (P<0.05). Meat from animals fed SB diets had less lightness and redness indices than meat from animals fed CS diets after 14 days of age. In conclusion, the addition of ground cottonseed in the finishing diets did increase the saturated fatty acid content of the longissimus dorsi. However, animals fed cottonseed exhibited greater lightness and redness of beef. In this study, the addition of vitamin E did not affect qualitative characteristics of meat.

Degree of unsaturation of fatty acids, which is influenced by lipid source and level of metabolism in the rumen, is a major determinant in how dietary lipids affect genes that regulate beef marbling. A total of 28 Red Norte bulls with an initial live weight of 361±32 kg (P>0.05) were used in a completely randomized experimental design to analyze the expression of genes that are involved in lipid metabolism in the longissimus dorsi (LD) when diets contained soybean grain or rumen-protected fat, with or without monensin. Treatments were arranged as a 2×2 factorial, with 4 treatments and 7 replicates per treatment. Half of the animals that received soybean or rumen-protected fat were supplemented with 230 mg head(-1) d(-1) of monensin. Gene expression was analyzed by reverse-transcription quantitative PCR (RT-qPCR). Expression of sterol regulatory element-binding protein-1c (SREBP-1c) in the LD muscle was not affected by lipid source or monensin (P>0.05). There was an interaction effect (P<0.05) between lipid source and monensin for peroxisome proliferator-activated receptor α (PPAR-α) and stearoyl-CoA desaturase (SCD) expression, where greater gene expression was found in animals fed soybean plus monensin and the lower gene expression was found in animals fed rumen-protected fat plus monensin. Expression of lipoprotein lipase (LPL) and fatty acid-binding protein 4 (FABP4) were greater (P<0.05) in the LD muscle of animals fed soybean. Monensin had no effect on LPL and FABP4 expression when soybean without monensin was fed, but when rumen-protected fat was fed, monensin increased LPL expression and decreased FABP4 expression (P<0.05). Linoleic and arachidonic acids had negative correlations (P<0.05) with the expression of PPAR-α, SCD, FABP4, and LPL genes. PPAR-α gene expression was not correlated with SREBP-1c but was positively correlated with SCD, FABP4, LPL, and glutathione peroxidase (GPX1) gene expression (P<0.001). Lipid sources and monensin interact and alter the expression of PPAR-α, SCD, acetyl CoA carboxylase α (ACACA), LPL, FABP4, and GPX1. These changes in gene expression were most associated with arachidonic and α-linolenic acids and the ability of lipid sources and monensin to increase these fatty acids in tissues.

This study evaluated the effect of feed restriction and goat genotype on meat quality. Three genotypes (Brazilian native breed Canindé; Brazilian native breed Moxotó; and F1 Boer crossbred animals obtained by crossing Boer bucks with local breed does) and three different feeding regimens (ad libitum fed, AL; restricted fed at 75% of the ad libitum, R.75; or restricted fed at 50% of the average ad libitum intake, R.50) were used. There was no difference (P>0.05) in chemical composition, total and soluble collagen, and shear force of the Longissimus lumborum muscle among genotypes. However, AL had greater amounts of soluble collagen and crude protein in the muscle (P<0.05) than R.75. No difference (P>0.05) was observed for the myofibrillar fragmentation index. The goat genotype presented few differences in their fatty acid profiles. However, goats fed ad libitum had a more favorable fatty acid profile for human health with greater concentrations of oleic acid, unsaturated fatty acids, and conjugated linoleic acid.

The objective was to evaluate the fatty acid profile and qualitative characteristics of meat from young bulls fed crude glycerin. Forty-four animals with an initial live weight of 368 ± 4 kg were used in a completely randomized design, with four treatments: no glycerin or addition of 6, 12 or 18% glycerin. The animals were slaughtered with 519.5 ± 14.9 kg of live weight. The meat characteristics assessed were chemical composition, shear force, fatty acid concentration, color and lipid oxidation. The addition of glycerin increased the content of ether extract (P<0.05) in the muscle. A linear increase was observed (P<0.05) in the oleic acid contents (C18:1 cis 9). The saturated fatty acid (SFA) contents linearly decreased in the muscle as a function of glycerin addition. The lightness (L*) and yellowness (b*) indices increased with the use of crude glycerin (P<0.05). The crude glycerin increased the intramuscular fat and oleic acid content in the longissimus dorsi muscle.

The objective of the present study was to evaluate the meat quality and fatty acid (FA) profile of the muscle and subcutaneous fat of young bulls fed ground soybean grain (SB) or rumen protected fat (RPF) with (230 mg head(-1) day(-1)) or without monensin. Forty animals with an initial weight of 359 kg were allotted in a 2×2 factorial arrangement of treatments. The use of monensin increased the arachidonic and α-linolenic acids in the longissimus dorsi (LD) muscle and subcutaneous fat, respectively (P<0.05). The meat from the animals receiving RPF had greater C18:1 content (P<0.01). The CLA and C18:2 contents were greater in the LD muscle of the animals fed SB (P<0.01). However, α-C18:3 was greater in the LD muscle of animals fed RPF (P<0.01). In the subcutaneous fat, SB reduced C12:0 and C14:0 contents (P<0.01) and increased C18:0 (P<0.05). The inclusion of RPF increased the C18:1 and CLA contents (P<0.01) in the subcutaneous fat. Soybean elevated PUFA contents and increased susceptibility of muscle and subcutaneous fat to lipid oxidation.

The objective of this study was to evaluate the effects of dietary addition of ground oilseed sources on the quality, fatty acid profile, and CLA content of meat from zebu steers. Thirty-one zebu steers with an initial average age of 23 mo and an initial BW of 365 kg were used in this study. The experimental period was 84 d, which was preceded by an adaption period of 28 d. The diet was provided ad libitum with a forage:concentrate ratio of 40:60. Corn silage was used as the forage source. Four different concentrates were formulated for each treatment: without additional lipids (control) or with ground soybeans (SB), ground cottonseed (CS), or ground linseed (LS). The SB, CS, and LS diets were formulated to have 6.5% ether extract on a total dietary DM basis. The experiment was set up as a completely randomized design. After slaughter, samples were taken from the longissimus thoracis muscle for the measurement of fatty acid concentration and the evaluation of meat quality. The luminosity index was greater in the control and LS diets (P < 0.01). The greatest percentages of myristic acid (C14:0), palmitic acid (C16:0), trans octadecenoic acid (C18:1 trans-10, trans-11, or trans-12), and SFA in the subcutaneous fat were observed in the CS treatment (P < 0.01). Moreover, the least percentages of oleic acid (C18:1 cis-9) and total unsaturated fatty acids in the subcutaneous fat were observed in the CS diet (P < 0.01). The meat linoleic acid and α-linolenic acid percentages were greatest in the SB and LS treatments, respectively (P < 0.001). The unsaturated fatty acid:SFA ratio was smallest for the CS diet (P < 0.01). A gradual increase in oxidation was observed as a function of storage time; however, the diets did not affect the rancidity of the meat (P > 0.05). The fatty acid profile of subcutaneous fat was impaired by the addition of CS. Supplying ground oilseeds did not increase the content of CLA in the meat.

Avaliou-se o desempenho de 25 novilhos Holandês x Zebu, castrados, com média de peso vivo inicial de 265±50 kg, sob pastejo emBrachiaria decumbens, distribuídos em cinco grupos e em cinco piquetes, segundo os tratamentos: controle - suplementação múltipla sem ionóforos (CONT); suplementação múltipla com 100mg/cab/dia de monensina (M100); suplementação múltipla com 200mg/cab/dia de monensina (M200); suplementação múltipla com 100mg/cab/dia de lasalocida (L100); suplementação múltipla com 200mg/cab/dia de lasalocida (L200). O período experimental foi de 105 dias, com rotação dos grupos nos piquetes a cada 21 dias. A suplementação foi fornecida ad libitum. A avaliação de desempenho ocorreu mediante a pesagem dos animais, em jejum de alimento e água de 14 horas, no início de cada período e término do experimento. Os animais alimentados com suplementos com ionóforos apresentaram maior ganho de peso em relação aos do controle (0,357 vs. 0,268; P = 0,0068). Entre os ionóforos, os animais alimentados com lasalocida ganharam mais peso (0,398 vs. 0,333; P=0,0175). O melhor desempenho pode ser explicado pelo maior consumo dos suplementos pelos animais alimentados com lasalocida (0,53 vs. 0,42; P<0,0001).


The performance of 25 castrated Holstein x Zebu crossbred steers averaging 265±50kgBW, grazing on Brachiaria decumbens, during dry season was evaluated. The experiment was carried out in a completed randomized design and the animals were grouped in five different paddocks with the following treatments: control - multiple supplement without ionophores (CONT); multiple supplement with 100mg of monensin/animal/day (M100); multiple supplement with 200mg of monensin/animal/day (M200); multiple supplement with 100mg of lasalocid/animal/day (L100); and multiple supplement with 200mg of lasalocid/animal/day (L200). The experimental period was 105 days, with changing groups on paddocks every 21 days. The multiple supplement was offered ad libitum. Body weight was evaluated after 14 hours of fasting. Animals fed multiple supplement with ionophores showed higher average daily weight gain than control (0.357 vs 0.268; P= 0.0068), as well as steers fed lasalocid in comparision to monensin (0.398 vs. 0.333; P= 0.0175). Animals suplemented with lasalocid had higher intakes and higher average daily gain (0.53 vs. 0.42; P<0.0001).

Avaliou-se o efeito do suplemento múltiplo com ionóforos sobre o consumo, a fermentação ruminal e a degradabilidade in situ da matéria seca da forragem. Utilizaram-se cinco novilhos Holandês x Zebu fistulados no rúmen, com peso vivo médio de 350kg, em delineamento em quadrado latino. Os tratamentos foram: suplementação múltipla sem ionóforos (CONT); suplementação múltipla com 100mg/cab/dia de monensina (M100); suplementação múltipla com 200mg/cab/dia de monensina (M200); suplementação múltipla com 100mg/cab/dia de lasalocida (L100); e suplementação múltipla com 200mg/cab/dia de lasalocida (L200). O uso de ionóforos no suplemento não influenciou o consumo de forragem, que foi, em média, 7,24kg MS/dia. A presença de ionóforos resultou em ligeiro aumento do pH ruminal em relação à ausência desses aditivos (P<0,05). Houve diferença na concentração do N-NH3 apenas para os teores de ionóforos em que 200mg/cab/dia reduziu a quantidade de N-NH3. As concentrações de acetato, propionato e butirato não foram influenciadas pela inclusão, pelo tipo ou pelos teores de ionóforos. A fração solúvel média (A) da Brachiaria decumbens foi igual a 22 por cento, e a fração insolúvel potencialmente degradável média (B) igual a 65 por cento, resultando em degradação potencial média de 87 por cento. A taxa de degradação média (c) foi de 0,03/hora. Os ionóforos não alteraram a degradação in situ da matéria seca.


The effect of multiple supplement with ionophores was evaluated on intake, ruminal fermentation, and in situ degradability of dry matter (DM) of the pasture forage. Five rumen fistulated Holstein x Zebu steers averaging 350kg of BW were used. The animals were grouped in five different paddocks under Latin Square experimental design. The treatments were multiple supplement without ionophores (CONT); multiple supplement with 100mg of monensin/animal/day (M100); multiple supplement with 200mg of monensin/animal/day (M200); multiple supplement with 100mg of lasalocid/animal/day (L100); multiple supplement with 200mg of lasalocid/animal/day (L200). The pasture intake was 7.24kg DM/day and it was not affected by ionophores. The average pH was influenced (P<0.05) by the presence of the ionophores in the supplements. There rumen N-NH3 concentration was negatively influenced by the ionophores levels in the multiple supplement. The molar concentrations of acetate, propionate, and butirate in the rumen were not affect by the presence, type, or level of ionophores. The mean soluble fraction A of Brachiaria decumbens was 22 percent, the mean potential degradable insoluble fraction (B) was 65 percent, and the degradability was 87 percent. The mean degradation rate (c) was 0.03/h. The ionophores did not affect DM in situ degradability.

Avaliaram-se a composição química e o perfil de ácidos na gordura do leite de búfalas alimentadas com fontes de lipídeos. Foram utilizadas nove búfalas em lactação, multíparas e com produção média diária de leite de 6,5kg. O delineamento experimental foi quadrado latino 3x3, triplo, composto por três tratamentos, três períodos de 21 dias e nove repetições. Os tratamentos foram dietas sem lipídeo adicional, com grão de soja e com óleo de soja. A proporção de silagem de milho variou entre 70 e 75 por cento. A inclusão de óleo de soja elevou os teores de gordura no leite e no queijo tipo muçarela. As concentrações de ácidos graxos saturados (AGS) variaram de 62,8 a 69,8 por cento. Não houve diferenças nos teores de AGS entre os tratamentos sem lipídeo adicional e com grão de soja. O tratamento com óleo de soja resultou em queda de 10 por cento no teor de AGS. As fontes lipídicas reduziram as concentrações de AGS e aumentaram as concentrações de ácidos graxos insaturados. Ácidos graxos encontrados na muçarela, em ordem decrescente, foram: palmítico, oleico, láurico e esteárico. O óleo de soja apresentou maior capacidade de elevar as concentrações do ácido linoleico conjugado (CLA) e do ácido vaccênico no leite e no queijo muçarela.


The chemical composition of milk and fatty acids profile in milk fat of water buffaloes fed different lipid sources were evaluated. Nine lactating multiparous water buffaloes, averaging 6.5kg of milk daily, were used. The statistical design was 3x3 triple Latin Square, three periods of 21 days and nine repetitions. The treatments were diet without additional fat, diet with soybean grain, and diet with soybean oil. Corn silage content in the diets ranged from 70 to 75 percent. The inclusion of soybean oil increased fat content in milk and mozzarella. Saturated fatty acid (SFA) concentrations in milk ranged from 62.8 to 69.8 percent. SFA content was similar in milk for the diets without additional fat and with soybean grain. However, in the diet with soybean oil, SFA decreased about 10 percent. Lipid sources reduced SFA and increased unsaturated fatty acids (UFA). The main fatty acids found in mozzarella fat, in decreasing array, were: palmitic, oleic, lauric, and estearic. Diet with soybean oil presented higher capacity of increasing conjugated linoleic acid (CLA) and vaccenic acid concentrations in milk and mozzarella.

Avaliaram-se o teor de ácido linoléico conjugado (CLA) e o perfil de ácidos graxos no músculo e na capa de gordura de novilhos bubalinos alimentados com diferentes fontes de lipídios. Utilizaram-se 12 animais castrados, da raça Murrah, com peso vivo de 306±8kg, submetidos aos tratamentos sem lipídeo adicional, grão de soja e óleo de soja, confinados durante 84 dias. Após o abate a carcaça foi resfriada a 5ºC, durante 24 horas. Foi feita secção entre a nona e a 11ª costelas da meia carcaça direita, de onde se separou músculo e capa de gordura, analisadas as concentrações de CLA e de ácidos graxos, por cromatografia gasosa. O fornecimento de óleo de soja resultou em maior concentração de CLA no músculo e na capa de gordura, e a adição de óleo de soja menores concentrações de ácidos graxos saturados, principalmente os ácidos mirístico e palmítico. Os animais que receberam a dieta com grão de soja integral também apresentaram menor teor de CLA e redução nas concentrações de mirístico e palmítico. Esses efeitos foram observados somente na capa de gordura e em menor intensidade.


The effect of different fat sources on fatty acid concentrations in the muscle and in the fat layer of water buffalo steers was studied. Twelve water buffalo steers weighting 306±8kg, fed without additional fat, soybean grain or soybean oil and confined during 84 days were used. The animals were slaughtered after 16-hours-fasting and the carcass was cooled at 5ºC, for 24 hours. A section was extracted between 9th and 11th ribs from the right half carcass and this section was separated in bone, muscle and fat layer. In the last two fractions, the fatty acids, including conjugated linoleic acid (CLA), were quantified by gaseous chromatography. The soybean oil provided higher CLA concentrations in the steers muscle and fat layer. Moreover, the soybean oil inclusion promoted lower saturated fatty acids contents, mainly miristic and palmitic acids. There was also increase in CLA concentrations and decrease in miristic and palmitic acids contents in the fat layer of the animals fed soybean grain diet. However, these effects were more moderate than those observed for the diet with soybean oil.

Avaliaram-se a produção e a composição do leite de vacas da raça Holandesa alimentadas com diferentes proporções de forragem e teores de lipídeos na dieta. Foram utilizadas oito vacas com 58±9 dias em lactação, com produção média de 28±4kg/dia de leite, distribuídas em delineamento quadrado latino 4 x 4 duplo, em arranjo fatorial 2 x 2. Os tratamentos foram dietas com alta forragem e baixo nível de lipídeos, alta forragem e alto nível de lipídeos, baixa forragem e baixo nível de lipídeos e baixa forragem e alto nível de lipídeos. As produções de leite e leite corrigido para 3,5 por cento de gordura não diferiu entre os tratamentos (P>0,05). A redução na proporção de forragem reduziu a produção e a concentração de gordura no leite (P<0,05). O aumento no teor de lipídeos nas dietas reduziu a concentração de sólidos totais e o teor de nitrogênio uréico no leite (P<0,05).


Milk yield and composition of Holstein dairy cows fed different forage to concentrate ratio as well as different lipid contents in the diets were studied. Eight cows with 58±9 days in milk and average production of 28±4 kg/day were assigned in a double Latin square design 4 x 4, in a 2 x 2 factorial arrangement. Treatments were diets with high forage and low lipid levels, high forage and high lipid levels, low forage and low lipid levels and low forage and high lipid levels. Milk yield and fat corrected milk yield (3.5 percent) were not affected by treatments (P>0.05). The reduction on forage ratio in the diet decreased milk fat percentage and production (P<0.05). The increase in lipid levels in the diets reduced total milk solids as well as milk urea nitrogen concentrations (P<0.05).

Sete carneiros fistulados no rúmen e no duodeno foram alojados em gaiolas metabólicas e alimentados com feno de Stylosanthes guianensis à vontade. Foi empregada a técnica de sacos de náilon para determinaçäo da degradabilidade in situ do feno, utilizando-se os tempos de 3, 6, 12, 24, 48 e 72 horas para as retiradas dos sacos do rúmen. A taxa de passagem dos sólidos foi determinada utilizando-se cromo mordante como indicador. Os valores de pH no líquido ruminal foram medidos nos tempos de 0, 2, 4, 6 e 8 horas após a alimentaçäo e a concentraçäo de amônia nos tempos de 0, 1, 3, 5, 7, 9 e 11 horas após a alimentaçäo. A taxa de degradaçäo da matéria seca (MS) foi de 8,5(porcento)h, a degradabilidade potencial 38,1(porcento) e a degradabilidade efetiva 30,3(porcento). A taxa de degradaçäo da proteína bruta (PB) foi de 9,7(porcento)h, a degradabilidade potencial 56,0(porcento) e a degradabilidade efetiva 47,5(porcento). A celulose apresentou maior degradabilidade efetiva que a hemicelulose, com valores de 22,5 e 8,9(porcento), respectivamente. A taxa de passagem dos sólidos foi 2,7(porcento)h. O pH diminuiu linearmente à medida que os tempos de coleta aumentaram. Para o tempo de 5,13 horas após a alimentaçäo, foi estimada a concentraçäo máxima de amônia de 12,18mg/100ml. O feno de S. guianensis apresentou alta taxa de degradaçäo e baixa degradabilidade ruminal da MS e PB

Utilizaram-se sete carneiros, sem raça definida, fistulados no rúmen e duodeno, para avaliar o consumo e as digestibilidades aparentes totais e parciais de matéria seca (MS), matéria orgânica(MO), proteína bruta (PB), extrato etéreo (EE), fibra em detergente neutro(FDN), fibra em detergente ácido (FDA), celulose (CEL) e hemicelulose (HCEL) do feno de Stylosanthes guianensis. Os animais receberam apenas feno de S. guianensis mais sal mineral como componentes da dieta. O fornecimento do feno foi ad libitum, sendo a quantidade calculada para permitir sobras de 20(porcento). Utilizou-se óxido crômico como indicador para estimar a produçäo de fezes e o fluxo de digesta no duodeno. Os consumos de MS e MO do S. guianensis foram 67,71 e 64,70g/kg 0,75 sobrescrito, respectivamente. As digestibilidades aparentes totais da MS, MO, PB, FDN e FDA foram 49,2, 51,3, 61,2, 42,0, e 42,7(porcento), respectivamente. As digestibilidades aparentes ruminais da MS, MO, FDN e FDA foram 75,8, 84,7, 89,6 e 90,6(porcento), respectivamente, em funçäo do total digerido. A digestibilidade ruminal da PB foi 21,3(porcento). Concuiu-se que o feno de S guianensis, colhido em estádio de maturidade avançada, pode ser indicado para ruminantes, pois seu consumo é capaz de atender às necessidades energéticas de mantença já que seus valores, apesar de sua digestibilidade näo ser elevada, säo ligeiramente maiores do que os de outras forrageiras tropicais
